Chipotle Chicken Taco Salad
1/3 cup chopped, fresh cilantro
2/3 cup light sour cream
1 chipotle chile, canned in adobe sauce
1 teaspoon ground cumin
1 teaspoon chili powder
8 teaspoons lime juice
1/4 teaspoon salt
2 cups shredded lettuce
1 cup spinach leaves
1 cup cherry tomatoes, halved
1/2 can black beans, rinsed & drained
1/2 can sweet whole kernel corn, rinsed & drained
2 cups chopped or shredded chicken
Mix the first 7 ingredients, stirring well.
To prepare the salad, combine lettuce and remaining ingredients in a large bowl. Drizzle dressing over the salad and toss gently. Serve immediately with tortilla chips. ENJOY!
The original recipe was slighty different, so this version includes my own "tweaks". You can of course add to the salad anything you like. The original recipe called for onions and avocado in the salad but I left them out because I don't care for either. Also, I used an already cooked rotisserie chicken so it was super easy!
