Oatmeal Chocolate Chip Cookies
1 1/4 cup softened butter
3/4 cup packed brown sugar
1/2 cup white sugar
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3 cups oatmeal
1 1/2 cups chocolate chips
Heat oven to 375 degrees.
Beat together butter and sugars in large bowl until creamy.
Add egg and vanilla and beat well.
Combine flour, baking soda, salt and spices in a smaller bowl.
Add flour mixture to the butter/sugar mixture and blend well.
Stir in oats and chocolate chips.
Drop dough by rounded tablespoon onto greased OR nonstick cookie sheet.
Bake for 10-12 mintues. Cookies should look slighty moist but starting to brown when done.
Makes approximately 56 cookies.
