New Week, New Idea

Well, I didn't mean to go MIA again...I have been struck yet AGAIN by this horrible "bug" that seems to be lurking around our house! UGH! I had a FULL weekend of spring cleaning planned but I only managed to get our living room cleaned, darn! Luckily, I have 3 more days off this week before I work ALL weekend (BOO!)...Easter weekend at that : ( So hopefully I will tackle some cleaning during this time. But I also have LOTS more to get done too! Oh, how I wish I could add hours to the day!

As I laid around yesterday and thought about everything I wanted needed for the house and browsed around on Etsy admiring all the totally adorable finds, I had an idea...I CAN MAKE THIS!!! Well, if I knew how to sew, and of course I would need a sewing machine... Well, tomorrow we are heading South to my parents house to return my Daddy's tiller Mikey borrowed and my mom is going to give me a sewing machine to use! I am super excited!!! Not really sure what I'm going to make first but I have LOTS of ideas in my head! I am a total novice though so this is going to take me a little while to teach myself what I'm doing, ha! I will be happy to take you on my journey though : )

Just what I need...yet ANOTHER project to take on! As if trying to learn about photography, graphic design, & home decorating isn't enough! Yeap, these wheels are always turning! Probably why I always feel exhausted and always behind! HA! You guys know what I mean, right!? But anyways, here's to my new goal of learning to sew...

We're still ALIVE...

I totally get that I have been neglecting my blog these past few days...well, uh...week I guess it is now. I just haven't felt like we have had much to share ; ) It's been pretty low-key around our house which has been GREAT! Poor Mikey got my yucky sickness from me so we have both been a little "under the weather" over the weekend. I am about 99% better! YAY!!!! But Mikey might have a couple more days to go : ( And I am in the process of working 3 nights in a row so that's why you haven't heard from us : )

Just for the record, I have two posts ready to post...right after I take the pictures for them...I have been procrastinating...taking my time with that. After having a crummy week last week, our weekend was spent mostly just hanging out together and watching TV : ) It was NICE! We really had to catch up on the Biggest Loser, so glad we had time to do that. We also watched Julie & Julia...soooo cute! Also, I have been really good about staying on track with my workouts & running! GO ME!

Now...for DWTS... I liked the football player, Jake was still a total dork, the Pussy Cat Doll girl was WAY too good, Kate G. really shouldn't have signed up to do this, and was Pamela Anderson drunk!?!? I mean seriously...she is SO weird! Overall, I thought it was pretty good. It should be entertaining to say the least.

As far as for the rest of our week, not sure what we're gonna get in to. I am hoping for some beautiful weather! And we might go to visit my parents...we'll see! For now I am going to dream of this...

S-I-C-K



This is me : ( This has been me for a couple of days now. This was suppose to be a VERY productive work week for me. I was scheduled to work some overtime to save up a little extra money. Well, my body decided against that. I worked Monday night. About halfway through the shift I noticed my throat was starting to get a little sore and was started to have that "closed-up" feeling...ugh! I didn't think much of it, just thought I was really tired and would feel better after sleeping all day ( I am hardly EVER sick, like really sick). But, by the time I left work later that morning I could hardly swallow at all and was feeling pretty miserable : ( Still, just thought I could sleep it off...Oh no, I woke up about 3 hours later in tears : ( So I've spent the last couple of days eating this...




And drinking this...


Only my chai tea hasn't had a pretty little cinnamon stick to stir with : (


Needless to say I wasn't able to work last night and won't be there tonight either. I really, REALLY didn't wan't to miss work this week, I am a bit frustrated about that but oh well, what can I do? I haven't slept this much in years, wait EVER!!! So, I know my body definitely needs this rest and healing time. Maybe tomorrow I can finally catch up on my posts! Until then, it's lots of soup, sleep, and TV time. I'm actually trying to convince myself to go get a book and a chai tea latte...that's makes me feel better just thinking about it, but wait...that means I have to leave my bed...

My Reading List: Have A Little Faith



I just finished reading Have A Little Faith by Mitch Albom. It actually took me a while to sit and read this book. I started into the first couple of chapters like 3 times before I finally stuck with it. Then, once I continued I read almost the entire book in one shift at work! I think it was hard for me to stick with this book at first because he flips back and forth between two different lives and it was hard for me to keep up when it had been a few days weeks since I had last read.

First, Mitch Albom is a wonderful author but also this book was a true story which I LOVE! As the title says, it is a book about faith. It doesn't focus on a particular faith, but rather gives you a big pitcure of how all faiths have a common basis...the belief in a higher power. The book tells the story of two completely different men, with completely different religions, backgrounds, lives...etc, but how they are so similar in other ways by being true to their respective faiths. This is kind of a difficult book to explain to you without typing it all out, but I do recommend it! It is a smaller book that doesn't take very long to read, but I do think it is much easier to follow when you read it all together pretty quickly. It's just truly a great story that will get your mind thinking...who doesn't need that, right? Ha!

Also, I know I shouldn't "judge a book by its cover," but I must say that this is the coolest looking book I think I've ever seen! You can't tell much about it from just the picture, but it's designed and textured (even the pages) to look like the main character's old prayer book that was held together by rubber bands. The design may or may not have been what persuaded me to buy the book...

Well, we have some friends coming to visit tomorrow from out of town and I have LOTS of cleaning to do! So, I better have my coffee and get to it! I hope you all have a WONDERFUL, beautiful weekend! I'm praying for LOTS of SUNSHINE : )

Chipotle Chicken Taco Salad

I have a yummy new recipe to share with you! I have been searching through my new magazines and on the internet for some new recipes for the spring and summer : ) Today I tried this salad recipe and we really liked it. And it's not bad for you either! YAY! It is very low-calorie and low fat, but you can't tell with all the flavor it has. It is spicy though, so if you're not into a little heat, this may not be for you.

Chipotle Chicken Taco Salad

Ingredients

DRESSING:

1/3 cup chopped, fresh cilantro
2/3 cup light sour cream
1 chipotle chile, canned in adobe sauce
1 teaspoon ground cumin
1 teaspoon chili powder
8 teaspoons lime juice
1/4 teaspoon salt

SALAD:

2 cups shredded lettuce
1 cup spinach leaves
1 cup cherry tomatoes, halved
1/2 can black beans, rinsed & drained
1/2 can sweet whole kernel corn, rinsed & drained
2 cups chopped or shredded chicken

PREPARATION:

Mix the first 7 ingredients, stirring well.

To prepare the salad, combine lettuce and remaining ingredients in a large bowl. Drizzle dressing over the salad and toss gently. Serve immediately with tortilla chips. ENJOY!

The original recipe was slighty different, so this version includes my own "tweaks". You can of course add to the salad anything you like. The original recipe called for onions and avocado in the salad but I left them out because I don't care for either. Also, I used an already cooked rotisserie chicken so it was super easy!

Spring Fever

Okay, so if this weather today doesn't symbolize that spring is finally coming I won't know what to think! Ha! Today was GORGEOUS! I had SO many things to get done inside, but I just wanted to stay outside!!! I had to sleep kinda late because I am working tonight...(i hate that because I can get SO much accomplished early in the morning) but then I had some breakfast, my coffee and then took a jog through the neighborhood followed by a dog walk. Isn't is funny how you don't see any neighbors for months in the winter, then a beautiful day comes around and everyone is out : ) I LOVE it!!!! I am SOOOO ready for spring and summer : ) I really, really hope the freezing cold weather is GONE for good!

Mikey has spent ALL day outside working, of course. He has got part of the backyard (the part with no grass) ready to lay sod when Lowes gets it in and has constructed us a precious little flower garden beside his shop. I did get some housework done, but I spent most of my day OUT in the SUNSHINE reading magazines and watching Mikey work, ha! It was glorious!

So, Mikey starts a new job serving tonight at a local restaurant here. That's great because we will have some extra income coming in while he goes back to school full-time...but REALLY stinks because we will never see each other : ( I am so used to having dinner together and most of the time he drives me to work, but no more : ( Oh well, God has awesome plans for us and this is all part of it! As cliche as it is..."Everything happens for a reason..."

A little of this & that

I am really slacking lately with my blogging. I just feel like the days are flying by lately. Well, my "off" days at least. I have been off the past 3 days and of course I didn't get accomplished near as much as I planned. 'Tis life, huh? As you can see I did manage to change my blog a little : ) But...I still can't figure out how to create a header though : ( It took me so long to change what I did change Wednesday night that I really didn't want to mess with it anymore these past couple of days. So, it's half-way changed which is driving me crazy so...if any of my sweet blog friends would like to offer up some advice/help it would be wonderfully appreciated : )

We finally got our china for the china cabinet! I LOVE IT!!! My daddy bought this china for his mother in 1957 in Japan when he was in the Marines. After she passed away a couple of years ago it was given back to him and he gave it to me for our wedding gift : ) Thanks Daddy!!!!!!!

We spent most of the last couple of days still trying to get the living room completely finished. We are sooo close, but still have a couple of little details. We painted an accent wall and Mikey is almost finished building our "hall tree" (quite possibly going to be my MOST favorite thing he has EVER built!). We just still need a couple of accessories but I can't seem to find exactly what I am looking for...so frustrating. Guess I will just keep searching. I am ready to finish this room and move on to the next : ) Which might be our backyard because I am dying to built a bigger patio for the summer : )...we'll see...

I guess I need to hurry off this computer and head outside. I am "revamping" our outdoor furniture on this lovely day! Have a GREAT Saturday night : )

Random Ramblings...

Just a few things on my mind I would like to address...
  • Jake...you picked Vienna...WHAT THE WHAT!?!?!?!?!?
  • Jake...DWTS...REALLY!?!?!?
  • I'm not sure how I'm really feeling about this season of DWTS...I mean Jake, Pam Anderson...Kate Gosselin...for real!?!? I'm just not really feeling it, but I swore off the bachelor like 3 years ago and you see I still watching...so we'll see...
  • I am LOVING the devotional and prayer project I am participating in through church, you can read more about that HERE.
  • We had another "let's break into the pantry and eat paper towel" incident last night...crazy pups! This time they were in trouble though...it wasn't quite as funny as it was HERE.
  • When does New Moon and The Blind Side come out on DVD?  I still REALLY want to watch these two movies...but I prefer to do it at home on my comfy couch with my lovely hubby : )
  • The Cheesecake Factory Red Velvet Cheesecake I FINALLY got to try a couple of nights was pretty much a little piece of heaven on earth...Y-U-M-M-Y!!!!!!!
  • I am planning to work VERY hard on my blog this week. I am TOTALLY clueless when it comes to blog design. I have tried to play with it before which only resulted in failure. I am going to really research, study it and try again and if I again fail...to a professional blog designer I am going to search for : ) So...my blog might look a little different/funny/weird the next few days...
  •  I am off for the next 3 nights! YIPPEE!!!! But I have LOTS to do! I want to work on my blog, study some photography (another journey I am embarking upon), my usual cleaning/cooking/laundry duties, finish "fixin" up our living room AND...my parents are coming to visit us Friday : ) So...wish me luck and LOTS of energy these next couple of days!
  • And since I don't want to post another post without any pictures...I leave you with a picture of Mikey and I in Jamaica. I am still dreaming of summer and convinced if I keep wishing for warm weather and reminiscing of summer memories Spring will finally make its appearance here in Alabama ; )
